
Fried Apples

Mid September is here and the change of seasons is in the air. Chilly mornings lead to warm afternoons and then back to cool evenings. The twighlight chorus of crickets and gray tree frogs are now joined by the katydids with their slow song " ka-t-did". September is apple season in New England and the endless choices of cider, wine and apple baked goodness can leave you dizzy!
One of my favorite ways to enjoy the icon of September is making fried apples. Choose a sweeter baking apple for this recipe since there isn't added sugar. The fragrance of the cinnamon apples will naturally perfume your home setting the stage for a cozy fall day. Enjoy!
Peel and slice an apple of your choice
Add the apple to a skillet and enough water to cover the apples.
Sprinkle cinnamon and a handful of walnuts to the apples and stir.
Cover and let the apples simmer on low heat until fork tender.
Once tender, remove the lid and cook on medium heat until the liquid has evaporated.
Gently flip the apples over as they brown
Serve with a side of breakfast sausage, if desired.
